Hawaii?s most authentic dishes are found in diners, village kitchens and at family reunions. Chef Tylun Pang of Ko Restaurant at the Fairmont Kea Lani in Maui rounded up favorites from all of the Hawaiian islands for the book What Maui Likes to Eat. Here are four easy samples.
- 1 pound sashimi-grade ‘ahi cut into � inch dice
- 1 medium-sized tomato trimmed and cut into � inch dice
- � cup Maui onion, peeled and chopped
- 2 tablespoons soy sauce
- 1 teaspoon sesame oil
- � teaspoon granulated sugar
- � teaspoon red chili pepper flakes OR 1 Hawaiian chili pepper, minced
- 2 tablespoons green onion, chopped, for garnish
Preparation:
Combine the ‘ahi, tomato, onion, soy sauce, sesame oil, sugar, and the red chili pepper flakes or minced chili pepper. Mix well. Allow flavors to blend for 1 hour before serving. Garnish with the chopped green onion before serving.
Makes 6-8 servings
